amber-desktop holds no files of its own. It is a metapackage: a name that depends on the applications of the suite, so they install and stay together under one name. Removing it leaves the applications in place. You do not need to install the shared pieces yourself: the applications depend on amber-fonts, amber-gtk4 and amber-vte themselves, and apt pulls them in. The Odin compiler and its language server are recommended rather than required, so --no-install-recommends leaves both out.
The amber-models-* packages are the speech weights, one package per direction, so a machine can take the voice without the ear. The language model is not a package: the broker downloads the one you pick, and its page lists them.
